Prep and bake
- Preheat the oven to 350F, then grease a 9x13-inch baking dish so the casserole releases easily.
- Steam the broccoli florets for 4-5 minutes until crisp-tender, then drain well to prevent a watery casserole.
- In a mixing bowl, combine cream of mushroom soup, mayonnaise, eggs, onion, 1 1/2 cups shredded cheddar, salt, and black pepper until evenly mixed.
- Fold the steamed broccoli into the soup mixture and spread it into the greased baking dish, then sprinkle with the remaining cheddar.
- Toss crushed Ritz crackers with melted butter, then sprinkle the crumb topping evenly over the casserole.
- Bake for 30-35 minutes at 350F until the casserole is bubbly and golden on top.
Notes
For the best texture, steam only until crisp-tender and drain very well—excess moisture can make the filling loose. Refrigerate leftovers in a covered container for up to 3 days; reheat in a 350F oven until warmed through. Freezing is not recommended because the creamy soup-and-mayo mixture can separate when thawed. Dietary swap: use a reduced-fat mayonnaise and cheese for a lighter version without changing the bake time.
