Ingredients

Pulled and shredded leftover rotisserie chicken
  • 2.5 cup leftover rotisserie chicken
Vegetables
  • 3 carrots sliced
  • 3 celery sliced
  • 0.5 onion diced
Aromatics and broth
  • 3 garlic minced
  • 6 cup chicken broth
  • 1 tbsp butter or olive oil
  • 1 tsp dried thyme
  • 0.5 tsp dried parsley
  • 0.25 tsp garlic powder
Noodles and finishing
  • 6 oz egg noodles
  • 0.5 lemon juice of 1/2 lemon
  • 0.25 salt and pepper to taste
  • 0.25 cup fresh parsley for garnish

Equipment

  • 1 Dutch oven

Method

Sauté the vegetables
  1. Melt the butter or olive oil in a large pot and sauté the onion, carrots, and celery for 4-5 minutes. Stir until the vegetables soften and the onion looks slightly translucent (no browning required).
  2. Add the garlic and cook for 1 minute, stirring constantly. Cook until fragrant, about 60 seconds.
Build the broth
  1. Pour in the chicken broth and add the dried thyme, dried parsley, and garlic powder. Stir to combine, scraping up any browned bits.
  2. Bring the soup to a boil. You should see steady bubbles across the surface before adding noodles.
Cook the noodles and chicken
  1. Add the egg noodles and cook for 5-6 minutes until almost tender. Keep the soup at a gentle boil so the noodles soften evenly.
  2. Add the leftover rotisserie chicken and simmer for 3-4 minutes until heated through. Stir occasionally so the chicken disperses through the broth.
Finish and serve
  1. Squeeze in the lemon juice and stir well. Taste and season with salt and pepper to taste.
  2. Garnish with fresh parsley and serve immediately. Add extra black pepper if desired.

Notes

For best texture, cook the egg noodles until just almost tender, then simmer briefly with the chicken so they don’t get overly soft. Store leftovers in the refrigerator up to 3-4 days; reheat gently on the stove, adding a splash of broth or water if thick. Freezing is not ideal because egg noodles can soften further, but if you do freeze, expect softer noodles. For a lighter option, use olive oil instead of butter and choose a lower-sodium chicken broth.
