Boil and drain
- Boil the potatoes in salted water for 15-20 minutes until very tender, stirring occasionally for even cooking. Visual cue: the largest cubes should break easily when pressed with a fork.
- Drain the potatoes well and return them to the pot over low heat for 1 minute to dry. Visual cue: the steam should look lighter and the potatoes should look slightly matte.
Mash and finish creamy
- Mash with butter until smooth. Visual cue: no visible chunks remain and the mixture looks thick and glossy.
- Stir in the evaporated milk, sour cream, and warm milk until creamy. Visual cue: the mash loosens into a uniform, silky texture.
Season and serve
- Season with salt and plenty of black pepper. Visual cue: pepper flecks are visible throughout, not just on top.
- Make a well in the center and add an extra pat of butter; serve immediately. Visual cue: a small butter pool forms in the center when the mash is hot.
Notes
For the smoothest texture, dry the drained potatoes over low heat for the full 1 minute before mashing—this helps prevent watery mash. Refrigerate leftovers in an airtight container up to 3 days; reheat gently on the stovetop with a splash of milk. Freezing is not recommended because sour cream can slightly grain after thawing. Dietary swap: use unsalted butter and swap the sour cream for plain Greek yogurt if you want a lighter tang, but keep seasoning adjustments.
