Ingredients

Chicken noodle soup base
  • 2 cup cooked chicken, shredded Rotisserie or leftover chicken works best.
  • 3 carrots Slice into thin rounds so they cook fast.
  • 3 celery Slice thin for quicker tender-crisp texture.
  • 0.5 onion Dice small for even sautéing.
  • 3 garlic cloves Minced.
  • 8 cup chicken broth Use good-quality broth for best flavor.
  • 1 tbsp butter
  • 1 tsp dried thyme
  • 0.5 tsp dried parsley
  • 0.25 tsp garlic powder
  • 6 oz egg noodles Dry egg noodles.
  • 0.5 lemon lemon juice Juice of 1/2 lemon.
  • 0.5 salt and pepper Add to taste; season generously at the end.
  • 1 fresh parsley For garnish.

Equipment

  • 1 Dutch oven

Method

Sauté the vegetables
  1. Melt the butter in a large pot over medium-high heat. Add the onion, carrots, and celery and sauté for 4 minutes, until the onion looks slightly translucent.
Build the broth
  1. Add the garlic and cook for 1 minute, stirring constantly until fragrant. Pour in the chicken broth and add the dried thyme, dried parsley, and garlic powder.
Cook the noodles
  1. Bring the soup to a boil. Add the egg noodles and cook for 6-8 minutes, stirring occasionally, until tender.
Warm the chicken and finish
  1. Add the shredded chicken and simmer for 2-3 minutes until heated through. Squeeze in the lemon juice and season generously with salt and pepper.
Garnish and serve
  1. Turn off the heat and garnish with fresh parsley right before serving. The surface should look bright and lightly aromatic from the herbs.

Notes

For best texture, keep the soup at a gentle simmer once the noodles are in—boil hard only at the start. Store leftovers in the refrigerator up to 4 days; reheat on the stove with a splash of broth or water. Freezing is not recommended because egg noodles can soften too much. Dietary swap: use gluten-free egg noodles to keep the method the same.
