Ingredients

Canned chicken
  • 2 can (12.5 oz) canned chicken drained and shredded
Black beans
  • 1 can (15 oz) black beans drained
Corn
  • 1 can (15 oz) corn drained
Rotel
  • 1 can (10 oz) Rotel diced tomatoes with green chiles
Chicken broth
  • 1 can (14 oz) chicken broth
Taco seasoning
  • 1 packet (1 oz) taco seasoning
Optional flavor add-ins
  • 1 packet (1 oz) ranch packet optional
  • 0.25 jalapeños optional
  • 1 tbsp lime juice optional
Toppings
  • 0.25 cup sour cream
  • 0.5 cup shredded cheddar
  • 1 cup tortilla chips
  • 2 tbsp cilantro
  • 1 tbsp lime for serving

Equipment

  • 1 Dutch oven

Method

Prep and load the pot
  1. Open all 6 cans and drain the chicken, beans, and corn. Keep the drained ingredients ready so you can add everything quickly.
  2. Add the drained chicken, black beans, corn, Rotel, and chicken broth to a large Dutch oven, then add the taco seasoning packet. Stir until the seasoning looks evenly distributed through the broth.
Simmer and finish
  1. Bring the soup to a boil over medium-high heat while stirring to combine everything. You should see active bubbling across the surface.
  2. Reduce to a simmer and cook for 10-12 minutes, stirring once or twice, until heated through and flavors meld. The soup should look cohesive with no cold spots.
  3. Stir in a squeeze of lime juice (and fold in jalapeños or ranch packet if using) and adjust seasoning to taste. The broth should smell brighter and slightly tangy.
Serve
  1. Serve immediately in bowls topped with sour cream, shredded cheddar, tortilla chips, cilantro, and additional lime. The toppings should sit on top without waiting so the chips stay crunchy.

Notes

Pro tip: Drain canned ingredients well so the soup stays thick and not watery, then stir a few times during the simmer to keep the seasoning suspended. Store leftovers in the refrigerator up to 3-4 days; reheat gently on the stove. Freezing is OK, but add toppings fresh after reheating for best texture. For a lower-sodium swap, choose a lower-sodium chicken broth and taco seasoning or use half the packet.
