Ingredients

Cranberry sauce base
  • 12 oz fresh cranberries
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar, packed
  • 0.75 cup orange juice
  • 0.25 cup water
  • 1 cinnamon stick
  • 1 tsp orange zest
  • 0.125 salt pinch
  • 1 tsp vanilla extract

Equipment

  • 1 cast iron skillet

Method

Make the syrup and cook the cranberries
  1. Combine granulated sugar, brown sugar, orange juice, water, cinnamon stick, and salt in a saucepan over medium-high heat and bring to a boil, stirring until the sugar dissolves. Visual cue: the liquid should look fully clear and glossy before adding cranberries.
  2. Add fresh cranberries and return to a boil over medium-high heat. Visual cue: the berries will rapidly start popping and the liquid will bubble all over.
  3. Reduce heat to low and simmer for 10-12 minutes, stirring often, until most berries burst and the sauce thickens. Visual cue: you should see split berries and a thicker, spoon-coating consistency.
Finish, cool, and chill
  1. Remove from heat and stir in orange zest and vanilla extract, then discard the cinnamon stick. Visual cue: the sauce will look darker and more fragrant right after adding the zest.
  2. Cool to room temperature, then chill so it thickens further as it cools. Visual cue: the surface will become more set and jelly-like once refrigerated.

Notes

Stir frequently during the simmer to prevent scorching and to help berries burst evenly. Refrigerate in a covered container up to 5 days; freeze up to 2 months, thaw overnight in the fridge and stir to loosen. For a lower-sugar option, use a 1:1 sugar substitute designed for cooking and follow the package guidance for simmering thickness.
