Ingredients

  • 12 oz fresh cranberries
  • 0.75 cup sugar
  • 0.5 cup ruby port or red wine
  • 0.25 cup orange juice
  • 2 tbsp Grand Marnier or orange liqueur
  • 1 cinnamon stick
  • 1 tsp orange zest
  • 1 pinch salt

Equipment

  • 1 cast iron skillet

Method

Cook the sauce
  1. In a saucepan, combine sugar, ruby port or red wine, orange juice, cinnamon stick, and salt; bring to a boil over medium-high heat. The mixture should look like it’s actively bubbling all over the surface.
  2. Add the fresh cranberries and simmer for 10–12 minutes, stirring occasionally, until the berries burst and the sauce thickens. You should see cranberry skins split and the liquid reduce to a glossy, spoon-coating consistency.
Finish and chill
  1. Remove from the heat, then stir in Grand Marnier or orange liqueur and orange zest. The sauce will look shinier and slightly darker as the flavors blend.
  2. Discard the cinnamon stick. Visually confirm no cinnamon stick pieces remain in the sauce.
  3. Cool the sauce, then chill until ready to serve. It should thicken further and hold its shape when spooned after cooling.

Notes

For the best texture, simmer until the sauce visibly thickens enough to coat the back of a spoon, then chill fully so it sets. Store covered in the refrigerator for up to 5 days; freezer is not recommended because the fruit texture can become grainy after thawing. If you want a lower-alcohol option, replace the port/wine with additional orange juice and keep the Grand Marnier step optional (or use a non-alcoholic orange liqueur).
