  • 1.5 lb chicken thighs Bone-in for the richest broth; shred after simmering.
  • 4 carrots Slice for even cooking.
  • 4 celery Slice for even cooking.
  • 1 onion Dice.
  • 8 garlic Minced (use 8 cloves).
  • 2 tbsp fresh ginger Grated.
  • 8 cup chicken broth Low-sodium if you want more control over salt.
  • 1 tsp turmeric Adds the golden color.
  • 1 tsp dried thyme
  • 0.5 tsp dried oregano
Finishing
  • 1 tbsp lemon juice Juice from fresh lemon.
  • 1 tbsp honey Drizzle to balance the broth.
  • 8 oz egg noodles Cook until tender, 6–8 minutes.
  • 0.25 fresh parsley For serving.
  • 1 lemon Extra wedges or slices for serving.
  • 0.1 salt To taste.
  • 0.1 pepper To taste.

Equipment

  • 1 Dutch oven

Method

Build the broth
  1. Combine chicken thighs, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, thyme, and oregano in a large pot. Bring to a boil over high heat, then reduce to a steady simmer.
  2. Simmer 25-30 minutes, stirring occasionally, until the chicken is very tender and easily shreds. Keep the liquid at a gentle simmer so the broth stays clear.
Shred and add noodles
  1. Remove the chicken from the pot and shred the meat; discard bones and skin. Return the shredded chicken to the pot.
  2. Add egg noodles and cook 6-8 minutes until tender. Stir often to prevent noodles from sticking.
Finish and serve
  1. Stir in lemon juice and honey, then season with salt and pepper to taste. Adjust until the broth tastes bright and well-balanced.
  2. Ladle into bowls and serve with extra lemon and fresh parsley. Add a squeeze of lemon right before eating.

Notes

For the clearest broth, maintain a gentle simmer (not a hard boil) while the chicken cooks. Store leftovers in an airtight container in the refrigerator up to 3 days; note that noodles absorb broth as they sit, so add a splash of broth when reheating. Freezing is not recommended because egg noodles can become soft after thawing. If you want a lighter option, use whole-wheat egg noodles or swap to gluten-free egg noodles for a gluten-free variation.
