Preheat and prep
- Preheat your air fryer to 390°F to ensure the crust crisps quickly as soon as the chicken goes in.
- Season the chicken breasts with salt, pepper, and garlic powder, then brush both sides with mayonnaise or Dijon mustard.
- In a bowl, combine panko breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, and smoked paprika.
- Press the panko-Parmesan mixture firmly onto all sides of each chicken breast so the coating adheres evenly.
Air fry
- Place the chicken in the air fryer basket in a single layer and spray generously with cooking spray to promote browning.
- Air fry for 16-18 minutes, flipping halfway through, until the crust is deeply golden and the internal temperature reaches 165°F (visual cue: dark-golden, set crust; temperature cue: 165°F in the thickest part).

Notes
For the crispiest, most shatter-like coating, pound the chicken to an even thickness and press the panko-Parmesan firmly so it fully bonds to the mayonnaise. Store leftovers in the fridge up to 3 days in an airtight container; reheat in the air fryer at 350°F for 4-6 minutes to re-crisp. Freezing is not recommended because the crust can soften after thawing. For a dairy swap, use a dairy-free Parmesan-style alternative (finely grated) to keep the flavor while adjusting texture slightly.
