Crockpot Cajun Butter Chicken

Crockpot Cajun butter chicken makes tender, juicy bone-in thighs with a deep red-orange Cajun spice crust as they slow-cook in buttery sauce. Cook on low for 5–6 hours (or high for 2.5–3) until the center hits 165°F, then optionally broil for extra-crisp skin.

Ingredients

Chicken and cooking base
  • 4 bone-in skin-on chicken thighs Keep skin on for the best buttery sauce and optional broil.
  • 4 cloves garlic, minced
  • 1 cup chicken broth Add around the chicken to create cooking liquid for the sauce.
Cajun butter
  • 6 tbsp butter, sliced Dot on top so it melts into a rich sauce.
  • 2 tbsp Cajun seasoning Use store-bought or homemade Cajun seasoning mix.
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp dried thyme
  • 0.5 tsp dried oregano
  • 0.25 tsp cayenne pepper Adjust to taste for heat level.
  • 0.25 tsp black pepper
  • Fresh parsley for garnish Use chopped parsley for a fresh, bright finish.
  • Cooked rice or mashed potatoes for serving Serve with your preferred starchy base to soak up the butter sauce.

Equipment

  • 1 Dutch oven

Method

Make the Cajun spice rub
  1. Mix together Cajun seasoning, smoked paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, and black pepper until evenly combined.
  2. Rub the spice mixture all over the chicken thighs, pressing lightly so the seasoning adheres to the skin and surface.
Slow-cook the chicken
  1. Place the seasoned chicken thighs in the slow cooker and add the minced garlic and chicken broth around the chicken (not over the spices).
  2. Lay the butter slices on top of each chicken thigh so they melt during cooking.
  3. Cook on low for 5–6 hours or high for 2.5–3 hours until the thickest part reaches 165°F, with the sauce visibly pooled around the chicken.
Finish and serve
  1. Optional: transfer to a broiler and broil for 3–4 minutes until the skin looks more browned and crisp at the edges.
  2. Spoon the butter sauce over each piece and serve over cooked rice or mashed potatoes, garnished with fresh parsley.

Notes

For the most flavorful crust, pat the chicken thighs dry before rubbing on the spices and keep the skin facing up in the slow cooker. Refrigerate leftovers in a sealed container for up to 3 days; reheat gently on the stovetop or in the microwave until hot throughout. Freezing is not recommended because the butter sauce can break after thawing. For a lighter option, use a reduced amount of butter (or a butter alternative) while keeping the Cajun spice rub the same.
