Prep and mix
- Preheat oven to 350F and grease a 9x13-inch baking dish so the potatoes release easily after baking (grease before mixing).
- In a large mixing bowl, stir sour cream, French onion dip, cream of chicken soup, melted butter, 1 cup Gruyere, shredded white cheddar, salt, and black pepper until evenly combined.
- Fold the thawed shredded hash browns into the mixture until fully coated, with no dry pockets visible.
Bake and brown
- Spread the hash brown mixture into the prepared baking dish, smoothing the top so it bakes evenly.
- Bake for 45 minutes at 350F until the center looks set and the edges start to bubble.
- Top with the remaining Gruyere and crispy fried onions, arranging the onions evenly for a crisp, golden layer.
- Bake 10-15 minutes more at 350F until golden and bubbling, watching closely for browning on the onion topping.
Notes
For the best creamy texture, thaw the hash browns completely and drain any excess moisture before mixing. Store covered in the refrigerator up to 4 days; reheat in a 350F oven until hot and bubbling. Freezing is not recommended because the creamy base can become watery after thawing. If you need a dairy-light option, use lactose-free sour cream and cheese products that melt well to keep the same creamy casserole feel.
