Ingredients

Green beans
  • 1.5 lb fresh green beans Trimmed.
Bacon
  • 8 slices bacon Halved crosswise.
Butter glaze
  • 0.25 cup butter Melted.
  • 0.33 cup brown sugar
  • 2 garlic Minced.
  • 1 tbsp soy sauce
  • 0.25 tsp black pepper

Equipment

  • 1 sheet pan

Method

Blanch and prep the oven
  1. Preheat oven to 400F. Blanch green beans in boiling water for 3 minutes, then plunge into ice water and drain.
Assemble bacon bundles and glaze
  1. Gather 8-10 green beans into a bundle and wrap with a half slice of bacon, placing each bundle seam-side down in a baking dish.
  2. Whisk melted butter, brown sugar, garlic, soy sauce, and black pepper until smooth.
  3. Pour glaze evenly over the bundles so they look glossy and coated.
Bake and serve
  1. Bake at 400F for 25-30 minutes until the bacon is crisp and the glaze is bubbling.
  2. Spoon pan glaze over the bundles right before serving, keeping them warm.

Notes

Pro tip: drain the blanched beans well so the bacon adheres and the glaze doesn’t thin out. Store leftovers in the fridge for up to 3 days and rewarm covered at 350F until hot. Freezing is not recommended because bacon texture softens. For a dietary swap, use turkey bacon and the same glaze for a lighter version.
