Ingredients

Bone-in chicken thighs
  • 2 lb bone-in chicken thighs
Vegetables
  • 4 carrots, sliced
  • 4 celery, sliced
  • 1 onion, diced
  • 8 cloves garlic, minced
  • 2 tbsp fresh ginger, grated
Greens and broth
  • 2 cup kale or spinach, chopped
  • 8 cup chicken broth
Seasonings
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 0.25 tsp black pepper
  • 0.25 tsp cayenne
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 0.1 salt to taste
Noodles and serving
  • 8 oz egg noodles
  • 0.25 fresh parsley and lemon for serving

Equipment

  • 1 Dutch oven

Method

Build the broth
  1. Combine chicken thighs, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, thyme, black pepper, and cayenne in a large Dutch oven. Bring to a boil, then you should see steady bubbling around the edges.
  2. Simmer for 30 minutes, until the chicken is very tender. Skim foam if needed and keep the pot at a gentle simmer, not a hard boil.
Shred and cook noodles
  1. Remove the chicken from the pot and shred the meat, discarding bones and skin. Return the shredded chicken to the broth and stir until evenly distributed.
  2. Add egg noodles and cook for 6-8 minutes, until tender. Look for noodles that are fully softened but not mushy.
Finish and serve
  1. Stir in kale (or spinach) and cook for 3 minutes, until wilted. The greens should turn bright and tender throughout the soup.
  2. Add lemon juice, apple cider vinegar, and honey, then season with salt to taste. Taste and adjust so the broth balances tang and warmth.
  3. Serve hot with extra lemon wedges and fresh parsley. Finish with a squeeze of lemon right before eating.

Notes

For best flavor, keep the simmer gentle so the broth stays clear; after the first boil, turn the heat down immediately. Refrigerate leftovers in a sealed container up to 3-4 days. Freezing is not recommended because egg noodles and greens can soften when reheated. Dietary swap: use chopped spinach instead of kale for a faster wilt and a milder bite.
