Method
Brown and simmer the soup
- Heat a large pot and brown the lean ground turkey (or chicken) until cooked through, then drain off excess fat.
- Add the shredded chicken, white beans, black beans, Rotel tomatoes, diced tomatoes, chicken broth, taco seasoning, cumin, and chili powder to the pot, then bring to a boil.
- Simmer for 15-18 minutes, stirring occasionally, until the flavors meld and the soup thickens slightly.
Blend dairy and finish
- Blend the cottage cheese until completely smooth, then stir it into the soup with the Greek yogurt.
- Simmer on low for 5 minutes, keeping the surface from boiling, until the soup looks creamy and uniform.
- Season with salt and pepper, then serve immediately with shredded cheddar, avocado, jalapeños, and cilantro.
Notes
For the creamiest texture, blend the cottage cheese until fully smooth before adding—this prevents lumps and keeps the broth silky. Refrigerate in a sealed container up to 4 days; reheat gently on the stove (do not boil). Freezing is not recommended because the dairy can separate slightly. Dairy swap (if desired): use an equal amount of plain blended lactose-free cottage cheese for a similar creamy swirl.
