Ingredients

Chicken soup base
  • 1.5 lb chicken breast or thighs Use bone-in or boneless; thighs add extra richness.
  • 4 carrots Slice for even simmering.
  • 3 celery Slice for even simmering.
  • 1 onion Dice small so it dissolves into the broth.
  • 6 garlic Minced for quick flavor release.
  • 2 tbsp fresh ginger Grated for the most aroma.
  • 2 cups shiitake or cremini mushrooms Slice for quick sauté-simmer effect in the soup.
  • 2 cups kale or spinach Chopped; add near the end to keep color and texture.
  • 8 cups chicken broth Low-sodium recommended so you can control salt at the end.
  • 1 tsp turmeric Adds the signature golden-orange color.
  • 1 tsp dried thyme Tastes best when simmered to bloom its flavor.
  • 0.25 tsp black pepper Helps activate turmeric.
  • 1 tbsp lemon juice Stir in at the end for brightness.
  • 8 oz egg noodles Cook until just tender so they don’t over-soften.
  • salt to taste Add gradually near the end.
  • fresh parsley and lemon for serving For topping and a final squeeze.

Equipment

  • 1 Dutch oven

Method

Simmer the chicken broth
  1. Add chicken breast or thighs, chicken broth, carrots, celery, onion, garlic, ginger, turmeric, dried thyme, and black pepper to a Dutch oven. Simmer for 20 minutes until the chicken is cooked through and the broth tastes well-seasoned, then keep the heat gentle so it stays bubbling.
Shred and finish the soup
  1. Remove the chicken from the pot and shred it, then return the shredded chicken to the broth. Stir to distribute the chicken evenly throughout the soup.
  2. Add shiitake or cremini mushrooms and cook for 5 minutes. The mushrooms should soften and blend into the broth’s flavor.
  3. Add egg noodles and cook for 6-8 minutes until tender. Stir occasionally so the noodles don’t stick and keep the soup at a steady simmer.
  4. Stir in kale or spinach and lemon juice, then cook for 3 minutes until the kale is wilted. The greens should turn bright and tender without losing their color.
  5. Season with salt to taste, then serve immediately with fresh parsley and lemon wedges. Taste and adjust lemon and salt so the broth feels balanced and bright.

Notes

Pro tip: If your noodles are soaking up broth, ladle portions into bowls instead of storing the whole pot, and reheat with a splash of water or broth. Refrigerate leftovers in a sealed container for up to 3-4 days; freezer: no (egg noodles can become soft after thawing). For a dairy-free, gluten-free swap, use gluten-free egg noodles and confirm your broth is gluten-free.
