Ingredients

Pineapple base
  • 1 cup pineapple juice or crushed pineapple (drained) Use juice for the smoothest blend, or drained crushed pineapple for extra fruit.
  • 0.5 cup coconut cream or coconut milk Choose full-fat for a thicker, creamier soft-serve texture.
  • 2 tbsp sugar or agave Sweetness can vary by pineapple—adjust slightly if your fruit is very tart.
  • 1 tbsp lemon juice Adds brightness and helps balance sweetness.
  • 0.25 tsp vanilla extract
  • 0.25 tsp salt Use a pinch; it sharpens the pineapple flavor.
  • 1 tbsp pineapple juice Only if needed to loosen an over-frozen texture before re-spinning.

Equipment

  • 1 Ninja Creami

Method

Blend until completely smooth
  1. Add the pineapple juice or crushed pineapple (drained), coconut cream or coconut milk, sugar or agave, lemon juice, vanilla extract, and salt to the blender and blend until completely smooth, with no visible pineapple bits.
  2. Scrape down the sides as needed and blend again until the mixture pours like a thick smoothie.
Freeze
  1. Pour the blended mixture into the Ninja Creami pint container and spread it evenly to fill the bottom in a flat layer.
  2. Freeze for 24 hours until solid.
Process and adjust texture
  1. Process on the Sorbet or Lite Ice Cream setting for the first spin, stopping when a dense, soft-serve consistency is formed.
  2. If the texture is too firm, add 1 tablespoon pineapple juice and re-spin until it turns creamy and scoopable.
Serve as a Dole Whip swirl
  1. Transfer the finished pineapple soft serve to a piping bag for clean swirls.
  2. Pipe into cups for the classic Dole Whip swirl, or serve directly from the pint for a quick serve.

Notes

For the best swirl, freeze the mixture fully solid for the full 24 hours, then process right away. Store covered in the freezer up to 2 days; for best texture, re-spin briefly if it stiffens. Freezing leftovers again after processing may make it harder, so plan to serve soon. This recipe is naturally dairy-free—if you want a closer texture to traditional Dole Whip, use full-fat coconut cream instead of coconut milk and keep the container tightly sealed.
