Ingredients

Whole chicken
  • 1 whole chicken 3-4 pounds
Vegetables aromatics
  • 5 carrots sliced
  • 5 celery with leaves sliced
  • 1 onion diced
  • 4 clove garlic minced
Broth
  • 10 cup water
  • 4 cup chicken broth
Seasonings and herbs
  • 4 tbsp unsalted butter
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 2 bay leaves
  • 1 tsp salt to season during first simmer
  • 0.5 tsp black pepper to season during final stage; adjust to taste
  • 1 fresh parsley for garnish
Noodles
  • 12 oz wide egg noodles

Equipment

  • 1 Dutch oven

Method

Simmer the whole chicken
  1. Place whole chicken in a very large pot with water, 2 cups chicken broth, half the carrots, half the celery, half the onion, bay leaves, and 1 teaspoon salt. Bring to a boil, skimming foam as needed, then simmer at a steady boil for 45 minutes until the chicken is fall-off-the-bone tender.
  2. Remove the chicken and shred all meat, discarding the skin, bones, and used vegetables. Strain the broth to remove bay leaves and any remaining solids, then return broth to the pot.
Build the soup
  1. Add the remaining chicken broth, unsalted butter, and the remaining carrots, celery, onion, and garlic to the pot. Simmer for 10 minutes, stirring occasionally, until the vegetables begin to soften.
  2. Add the shredded chicken, dried thyme, and dried parsley. Simmer briefly for 2-3 minutes, so the herbs infuse the broth and everything is heated through.
Cook noodles and finish
  1. Add wide egg noodles and cook for 6-8 minutes until tender. Stir gently to prevent sticking and adjust heat as needed to maintain a gentle simmer.
  2. Season generously with salt and black pepper to taste. Garnish with fresh parsley and serve hot with the rich broth and noodles.

Notes

Pro tip: strain the broth after the first simmer for a clearer, richer base before adding fresh vegetables and noodles. Refrigerate leftovers in an airtight container for up to 4 days; for best texture, store noodles separately if you expect to reheat more than once. Freezing is not recommended because egg noodles can turn soft after thawing. Dietary swap: for a gluten-free version, use gluten-free wide egg noodles and cook them according to package directions.
