all-purpose flour
  • 0.25 cup all-purpose flour
salt
  • 1.5 tsp salt
black pepper
  • 1 tsp black pepper
vegetable oil
  • 2 tbsp vegetable oil
onion
  • 1 onion, chopped
garlic
  • 3 garlic, minced
tomato paste
  • 2 tbsp tomato paste
Guinness stout
  • 1 can (11.2 oz) Guinness stout
beef broth
  • 1.5 cup beef broth
Worcestershire sauce
  • 1 tbsp Worcestershire sauce
brown sugar
  • 1 tbsp brown sugar
dried thyme
  • 1 tsp dried thyme
carrots
  • 4 carrots, sliced thick
baby potatoes
  • 1.5 lb baby potatoes, halved
fresh parsley
  • 2 tbsp fresh parsley, chopped

Equipment

  • 1 Dutch oven
  • 1 slow cooker

Method

Brown the beef
  1. Toss the beef with flour, salt, and black pepper until evenly coated; the pieces should look dry-dusted. Heat vegetable oil in a Dutch oven over medium-high until shimmering.
  2. Brown the beef in hot oil, turning as needed, until well-browned on multiple sides; transfer to the slow cooker as it finishes. Keep the oil hot for better color, aiming for a deep, crusty exterior.
Build the stout gravy
  1. In the same pan, cook the onion, garlic, and tomato paste for exactly 3 minutes. Stir until fragrant and slightly darkened, with the tomato paste clinging to the pan.
  2. Pour in the Guinness stout and scrape the bottom of the pan to loosen the browned bits; simmer for 2 minutes. You should see steam and a glossy dark sauce form in the pan.
  3. Pour the stout mixture into the slow cooker over the browned beef. Spread it so the beef is surrounded for even braising.
Slow-cook until tender
  1. Add beef broth, Worcestershire sauce, brown sugar, dried thyme, sliced carrots, and halved baby potatoes to the slow cooker. Give everything a gentle stir so vegetables are distributed.
  2. Cover and cook on LOW for 8 hours until the beef is very tender and the potatoes are soft. Look for active steam and a thickened, dark-brown stew consistency around the edges.
Finish and serve
  1. Season to taste with additional salt and black pepper as needed. The stew should taste balanced and rich without sounding overly bitter.
  2. Garnish with chopped fresh parsley right before serving. Add it at the end for a bright green color and fresh aroma on top.

Notes

For the deepest flavor, don’t crowd the beef—brown in batches if needed so it develops a strong crust. Store leftovers in the refrigerator up to 4 days; reheat gently on the stovetop or microwave. Freezing is yes for up to 3 months, but potatoes may soften further after thawing. If you want a lighter version, use low-sodium beef broth and reduce added salt to taste.
