Season the chicken
- Season the chicken thighs evenly with garlic powder, onion powder, smoked paprika, salt, and cracked black pepper.
Sear the chicken
- Heat the vegetable oil in a cast iron skillet over medium-high heat and sear the chicken skin-side down for 6-7 minutes until deeply golden, then flip and sear 4 minutes.
- Remove the chicken from the skillet and set aside while you cook the vegetables, keeping any browned bits in the pan.
Cook the onions, mushrooms, and garlic
- In the same skillet, cook the onions over medium heat for 6-7 minutes until deeply caramelized.
- Add the mushrooms and garlic and cook for 4-5 minutes until softened and fragrant, stirring as needed.
Build the gravy
- Sprinkle the flour over the vegetables and stir for 1 minute to cook out the raw flour taste.
- Gradually whisk in the chicken broth while scraping up the browned bits from the bottom of the skillet.
- Stir in the heavy cream, Worcestershire sauce, and dried thyme.
Smother and simmer
- Nestle the chicken back into the gravy, return it skin-side up, cover, and simmer for 15 minutes until cooked through.
Finish and serve
- Garnish with fresh parsley and serve the smothered chicken over mashed potatoes or rice with the dark onion gravy pooling around the edges.
Notes
For the richest gravy, don’t rush the onion caramelization—deep color is what gives the dark, savory look. Refrigerate leftovers in an airtight container up to 3 days; reheat gently in a skillet or microwave until hot. Freezing is not recommended because the cream can break after thawing. For a lighter option, swap heavy cream for half-and-half and simmer 2-3 minutes longer to thicken.
