Ingredients
  

Bone-in skin-on chicken thighs
  • 4 bone-in skin-on chicken thighs Use thighs for the most tender, smothered gravy texture.
Seasonings
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 0.5 salt and pepper Season to taste; keep an eye on the broth saltiness.
Cooking base
  • 2 tbsp vegetable oil
  • 1 large onion Thinly sliced for caramelized sweetness.
  • 3 cloves garlic Minced.
Gravy thickener and liquids
  • 2 tbsp all-purpose flour Helps thicken the onion gravy.
  • 2.5 cup chicken broth
  • 0.5 cup heavy cream Adds creamy richness.
  • 1 tsp Worcestershire sauce
Rice and garnish
  • 1.5 cup long-grain white rice Uncooked; cook covered on low until tender.
  • fresh parsley For garnish, optional but recommended.

Method
 

Season and sear the chicken
  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat vegetable oil in a large Dutch oven over medium-high and place chicken skin-side down to sear for 6-7 minutes until golden.
  2. Flip the chicken and sear for 4 minutes until browned. Remove the chicken to a plate.
Caramelize the onions
  1. Cook the onion in the same Dutch oven over medium heat for 8-10 minutes until caramelized. Stir in the minced garlic and cook for 1 minute.
  2. Sprinkle the all-purpose flour over the onions and stir for 1 minute. Gradually add the chicken broth while scraping up the browned bits from the bottom of the pot.
  3. Stir in the heavy cream and Worcestershire sauce until the gravy looks smooth and cohesive. Add the uncooked long-grain white rice and stir to coat.
Smother and cook until tender
  1. Nestle the chicken skin-side up into the broth and rice. Bring the mixture to a simmer on the stovetop.
  2. Cover tightly and cook over low heat for 20-22 minutes until the rice is cooked and the chicken reaches 165°F. Keep the lid on during cooking for consistent steam and even rice texture.
Finish and serve
  1. Garnish with fresh parsley. Serve hot straight from the Dutch oven with the gravy coating every surface.

Notes

Pro tip: scrape the browned bits when adding chicken broth—those caramelized drippings create the dark, luscious gravy. Refrigerate leftovers in a sealed container for up to 3 days; reheat gently with a splash of broth or water to loosen the gravy. Freezing is not recommended for best rice texture, but you can freeze up to 1 month if needed. For a lighter swap, use half-and-half instead of heavy cream.
