Season and sear the chicken
- Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat vegetable oil in a large Dutch oven over medium-high and place chicken skin-side down to sear for 6-7 minutes until golden.
- Flip the chicken and sear for 4 minutes until browned. Remove the chicken to a plate.
Caramelize the onions
- Cook the onion in the same Dutch oven over medium heat for 8-10 minutes until caramelized. Stir in the minced garlic and cook for 1 minute.
- Sprinkle the all-purpose flour over the onions and stir for 1 minute. Gradually add the chicken broth while scraping up the browned bits from the bottom of the pot.
- Stir in the heavy cream and Worcestershire sauce until the gravy looks smooth and cohesive. Add the uncooked long-grain white rice and stir to coat.
Smother and cook until tender
- Nestle the chicken skin-side up into the broth and rice. Bring the mixture to a simmer on the stovetop.
- Cover tightly and cook over low heat for 20-22 minutes until the rice is cooked and the chicken reaches 165°F. Keep the lid on during cooking for consistent steam and even rice texture.
Finish and serve
- Garnish with fresh parsley. Serve hot straight from the Dutch oven with the gravy coating every surface.
Notes
Pro tip: scrape the browned bits when adding chicken broth—those caramelized drippings create the dark, luscious gravy. Refrigerate leftovers in a sealed container for up to 3 days; reheat gently with a splash of broth or water to loosen the gravy. Freezing is not recommended for best rice texture, but you can freeze up to 1 month if needed. For a lighter swap, use half-and-half instead of heavy cream.
