Ingredients

Spiced cider
  • 1 cup apple cider Use plain apple cider for the best spiced flavor.
  • 2 cinnamon sticks
  • 2 star anise
  • 3 whole cloves
  • 2 tbsp brown sugar
Assembly
  • 1 bottle (750 ml) prosecco Chill the prosecco before assembling.
  • 1 apple Thinly slice; save extra slices for garnish.
  • 1 cinnamon sugar For rimming the flutes.

Equipment

  • 1 Dutch oven

Method

Simmer the spiced cider
  1. In a Dutch oven, simmer apple cider with cinnamon sticks, star anise, whole cloves, and brown sugar for 10 minutes, until fragrant and well-spiced.
Strain and chill
  1. Strain the spiced cider, then chill it completely so it’s cold when you assemble the drink.
Rim the flutes
  1. Rim each champagne flute with cinnamon sugar to coat the edges evenly.
Assemble and serve
  1. Pour 2 tablespoons of spiced cider into each flute, filling about the bottom layer.
  2. Top each flute with chilled prosecco, garnish with an apple slice, and serve immediately.

Notes

Pro tip: chill the spiced cider completely (and keep the prosecco cold) so the bubbles stay lively. Store leftover spiced cider in the fridge up to 3 days; freeze up to 2 months if you want to prep ahead, and thaw overnight in the refrigerator. For a lighter option, use brut sparkling wine instead of prosecco to reduce sweetness while keeping the same spiced-cider flavor.
