Method
Brown and sauté
- Brown the ground beef in a large pot over medium-high heat until cooked through, then drain excess fat. You should see no pink remaining and the meat should look lightly browned.
- Sauté the onion for 3 minutes, then add the garlic and cook for 1 minute. The onion should turn translucent and the garlic should smell fragrant without browning.
Simmer the soup
- Add the black beans, corn, Rotel tomatoes, diced tomatoes, taco seasoning, ranch dressing mix, beef or chicken broth, and cumin to the pot and stir until evenly combined. The mixture should look like a thick, speckled Tex-Mex broth with beans and tomatoes throughout.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes. After simmering, the flavors should meld and the soup will look slightly thicker.
Finish and serve
- Season with salt and add a squeeze of lime juice. Taste for balance—there should be a noticeable lime brightness in the broth.
- Serve hot with lime wedges, sour cream, shredded cheddar, tortilla chips, cilantro, and avocado. The toppings should be fresh and colorful, with chips adding crunch right before eating.
Notes
Pro tip: For the thickest texture, simmer uncovered for the full 20 minutes so the broth reduces slightly. Refrigerate leftovers in an airtight container up to 4 days. Freeze the soup base (without sour cream, cheddar, chips, avocado) for up to 3 months; thaw and reheat, then add toppings fresh. For a lighter swap, use ground turkey and low-sodium broth if desired.
