Ingredients

Chicken and vegetables
  • 1.5 lb chicken breast
  • 4 carrots sliced
  • 4 celery sliced
  • 1 onion diced
  • 4 garlic minced
  • 8 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 0.5 tsp garlic powder
Noodles and finishing
  • 12 oz wide egg noodles
  • 2 tbsp fresh dill chopped
  • 1 salt to taste
  • 1 pepper to taste

Equipment

  • 1 Dutch oven

Method

Sauté the vegetables
  1. Heat the olive oil in a large pot and sauté the onion, carrots, and celery for 5 minutes, until the onion looks translucent.
  2. Add the garlic and cook for 1 minute, stirring, until fragrant.
Simmer the chicken broth
  1. Add the chicken broth, thyme, dried parsley, garlic powder, and chicken to the pot.
  2. Bring the mixture to a boil over high heat, then reduce to a simmer and cook for 18-20 minutes until the chicken is cooked through.
  3. Remove the chicken, shred it, and return the shredded chicken to the pot.
Cook the egg noodles
  1. Bring the soup back to a boil and add the wide egg noodles.
  2. Simmer for 7-8 minutes until the noodles are tender but not mushy, stirring occasionally so they don’t stick.
Finish and season
  1. Stir in the fresh dill and season generously with salt and pepper to taste.

Notes

For the best noodle texture, plan to serve soon after cooking the noodles; leftovers will thicken as the egg noodles absorb broth. Refrigerate up to 3 days; freeze the soup base (without noodles) for up to 2 months, then cook fresh noodles when reheating. For a lighter option, use low-sodium chicken broth and adjust salt at the end to taste.
